Pizza Bites

I made and froze these as well today. I didn't taste one, but the boys did and they both send they were really good. They made my kitchen smell good!! Very easy to make too.

2 cans refrigerated pizza dough
8 oz mozzarella cheese, cut into 48 cubes
pepperoni
1/4 cup olive oil
1 tsp. italian seasoning
3 tbs. Parmesan cheese
2 cups pizza sauce, heated

Preheat the oven to 400 degrees. Spray cookie sheets with cooking spray.

On a lightly floured surface, roll out pizza crust and cut into squares. Place 1 pepperoni and 1 cute of cheese on each square. Wrap dough around, pressing to seal. Place seam side down on cookie sheets.

Mix oil and seasoning, drizzle over rolls. Sprinkle with parmesan cheese.

Bake for 16-20 minutes, or until golden brown. Serve with warm pizza sauce for dipping.

To freeze: flash freeze on a cookie sheet until frozen solid. Place in a ziplock bag.

Whole wheat waffles

I did some freezer cooking today and this was one of the things I made and froze. My boys really like these waffles.

1 3/4 cup whole wheat flour
2 tbs. sugar
1 tbs. baking powder
2 eggs
1 3/4 cup milk
1/2 cup oil (or you can do 1/4 cup oil, 1/4 applesauce or other fruit puree)
1 tsp. vanilla

In a mixing bowl, combine dry ingredients. In a separate bowl, lightly beat together wet ingredients, add to the dry ingredients and stir just until moist. Pour into lightly oiled waffle iron and bake until done, about 3-4 minutes.

To Freeze: allow to cool completely and place in a freezer bag.

This makes 4 Belgium waffles.

Crock pot Beef Stew


2 lbs beef stew meat, cut into 1 inch cubes
1/4 cup All Purpose flour
1/2 tsp salt
1/2 tsp black peper
1 garlic clove, minced
1 bay leaf
1 tsp paprika
1 tsp Worcestershire sauce
1 onion, chopped
1 1/2-2 cups beef broth
3 potatoes, peeled and diced
4 carrots, sliced
1 celery stalk, chopped

Place meat in crock pot. In a small bowl, mix flour, salt and pepper. Pour over meat. Stir to coat meat. Stir in remaining ingredients.

Cover and cook on low for 10-12 hours or on high for 4-6.

Homemade Bread


The bread is very easy to make and so good! Don't let the fact that it's done by hand scare you, it's very, very easy!!! I used a bread machine up until a few months ago because I was too scared to attempt to try making bread by hand. Then a friend gave me this recipe and I'll never make bread in the machine again. It's so much better and it's so simple!

3/4 cup warm water
1 pkg. yeast
1 tsp. salt
2 Tbs. honey
1 Tbs. butter, softened
1/2 cup milk
3 cups all purpose flour, approximately (you can also use whole wheat flour. I do a combination of all purpose and whole wheat)

In a large bowl, add warm water. Slowly stir in yeast. Stir until yeast is dissolved.

Add salt, honey, butter and milk. Stir. Mix in first two cups of flour. If needed, begin adding more flour one Tbs. at a time, until the dough chases the spoon around the bowl.

Turn dough onto a floured surface and knead, adding small fistfuls of flour as needed, until the dough is soft and smooth, not sticky to the touch.

Place in a buttered bowl, turning once so the top is greased. Cover with a clean towel and let rise for 1 hour.

Punch dough down and turn onto a floured surface and knead.

Preheat oven to 375 degrees.

Form dough into a loaf and place in a buttered bread pan. Cover and let rise for about 30. minutes.

Score dough by cutting 3 slashes across the top. Bake for about 45 minutes. Turn bread out and let cool.

Pumpkin Pancakes

I made these pancakes for dinner last night, they were sooo good!!! I was hoping to have leftovers to freeze for a quick breakfast, but there were no leftovers. My boys ate 4 pancakes each!!!! You have to try these, they are really good!!!

Ingredients:

1 1/4 cups all purpose flour
2 Tbs. sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
Pinch of cloves
1 1/4 cup low fat milk
1/3 cup pureed pumpkin
2 Tbs. melted butter
1 egg

In a mixing bowl, combine flour, sugar, baking powder, spices and salt. In a separate bowl, whisk together milk, pumpkin, butter and egg. Fold into dry ingredients, stirring just until moist. Spray a large skillet with cooking spray and heat over medium heat. Pour 1/4 cup batter into pan. Cook about 3 minutes on each side, or until golden, flipping only once.

Whole Wheat Honey Pumpkin Muffins.



I love to cook and try new recipes. I decided to create this blog to share my favorite recipes.

I found this recipe the other day and thought it sounded good, and they definitely are good!!!




Whole Wheat Honey Pumpkin Muffins

Ingredients:
1 1/2 cups whole wheat flour
1/2 cup brown sugar
1 tsp. pumpkin pie spice
dash of cinnamon
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs
1 cup canned pumpkin puree (not pumpkin pie filling)
1/2 cup oil
1/2 cup honey

Preheat oven to 350 degrees. Grease muffin pan.

In a mixing bowl, combine flour, sugar, spices, baking powder, soda and salt. Make a well in the center. Add eggs, pumpkin, oil and honey. Stir just until moist. Fill muffin cups 2/3 full.

Bake 18-20 minutes.
